Air Fryer Smashed Brussel Sprouts Recipe (tiktok)

This recipe for Air Fryer Smashed Brussels Sprouts uses boiled then smashed sprouts tossed with garlic, olive oil, and Parmesan cheese before cooking in an air fryer. The method yields tender sprouts with crispy edges and a savory, garlicky flavor enhanced by cheese. Boiling softens the sprouts for smashing, while air frying crisps the surfaces for contrast.

Description

The process starts by trimming and boiling Brussels sprouts until just tender, then shocking them in ice water to halt cooking and preserve color. After drying, they are smashed with the bottom of a glass to flatten partially. A mixture of olive oil, pressed garlic, sea salt, black pepper, and Parmesan cheese coats the smashed sprouts before air frying at 400°F for 5 minutes. This quick air frying crisps the exterior while leaving the center soft.

The garlic and Parmesan add savory depth and a slight salty richness that complements the mild bitterness of the sprouts. The smashing technique increases surface area for extra crispiness. The sprouts come out tender with crunchy edges, ideal as a side dish or snack. The recipe advises against overcooking to maintain texture and suggests choosing sprouts of similar size for even cooking.

For a different crisp, the smashed sprouts can instead be baked on a baking sheet at 425°F for 20 to 30 minutes without parchment paper, which can inhibit browning. This variation produces a softer inside with a crispy outer crust.

Ingredients

Servings
  • 10 oz Brussels sprouts
  • 1 garlic
  • 3 tablespoons olive oil
  • sea salt a pinch
  • black pepper a pinch
  • 2 tablespoons Parmesan Cheese

Instructions

  1. Clean the sprouts by cutting off the ends and removing the outer leaves if needed.
  2. Set a pot with water to boil. When it boils, add the salt and sprouts and let them cook for about 10 minutes. You can also microwave them if you prefer. Put the sprouts in a microwave-safe bowl, add half a cup of water, and let them cook for 4-6 minutes (check after a few minutes if there is enough water).
  3. When they are ready, put them in a large bowl with water and ice to stop the cooking process. Drain them and dry them with a cloth.
  4. Add the oil, spices, pressed garlic, and parmesan cheese in a small mixing bowl and mix well.
  5. Smash the sprouts with the help of the bottom of a glass; in the meantime, preheat the air fryer to 400 degrees F (200 degrees C) for 2 minutes.
  6. Transfer the sprouts to the basket of the air fryer, being careful not to overlap them, and spread the oil mixture on top with a kitchen brush. Cook in the air fryer for 5 minutes at 400 degrees F (200 degrees C).
  7. After the 5 minutes have passed, turn the sprouts over with the help of kitchen tongs, spread the oil mixture on top again, and cook for another 4 to 5 minutes at 400 degrees F.
  8. Serve with dips for a delicious finger appetizer.

Notes

  • For even cooking, select Brussels sprouts of similar size; trim and remove outer leaves as needed.
  • Do not overcook sprouts during boiling; they should be soft enough to smash but not mushy.
  • Avoid using baking paper when baking smashed sprouts to promote crispier results.
  • Cooking alternatives include air frying or baking, depending on desired texture.
