Air Fryer Smashed Potatoes are small Yukon gold potatoes boiled until tender then gently smashed and seasoned with garlic, parsley, salt, and pepper. Brushed with melted vegan butter, they are air fried until crispy and golden. This technique gives potatoes a contrast of creamy interior and crispy edges, making them a versatile side dish.

Description

The recipe begins by thoroughly scrubbing small potatoes and boiling them in salted water until tender but still intact. After draining and cooling slightly, each potato is carefully smashed to about half an inch thickness without breaking apart. A seasoned garlic butter mixture made from vegan butter, minced garlic, dried parsley, salt, and pepper is brushed onto both sides of the potatoes.

Then, the potatoes are spaced out in the air fryer basket to allow proper air circulation, and cooked at 400°F for 8-12 minutes until they achieve the desired crispness. The result is tender inside with a crispy surface, flavored delicately with garlic and herbs.

These smashed potatoes work well as a snack or side dish. Using small potatoes ensures crispier results, and seasoning the boiling water or substituting broth can enhance flavor. Letting the potatoes cool before smashing prevents them from breaking, and spacing in the air fryer basket helps even cooking without flipping.

  • 1 pound potato approx. 4 small potatoes, Yukon gold variety
  • 2 tablespoons vegan butter sub for cooking oil if preferred OR vegetable broth for oil free, melted or margarine
  • 3 cloves garlic peeled + minced
  • 1 teaspoon parsley dried
  • ½ teaspoon salt or to taste, sea salt
  • ¼ teaspoon black pepper or to taste

Instructions

  1. Scrub your potatoes very well since you'll be eating the skins. Then place them in a pot and fill with water that covers one inch above the potatoes. Add a teaspoon of salt and bring to a boil. Cook until a fork pierces the potatoes, but they still remain intact, approx. 18 minutes. Do NOT overcook, or they will break when you smash them.
  2. While the potatoes are cooking, melt the butter (if using) in a small saucepot. Then mix in the minced garlic and seasoning and set aside.
  3. Drain the potatoes and transfer to a cutting board to let cool for a few minutes, until easy to handle. Use a large fork or potato masher to carefully smash the potatoes until flattened to approx. half an inch thick. (Careful: do not overly smash them, or they may break.)
  4. Brush both sides of the potato with your seasoned butter mixture and transfer to your basket, leaving plenty of space in between each one. Air fry at 400 degrees F for 8-12 minutes, or until desired crispiness is reached.
