Air Fryer Spaghetti Squash

This Air Fryer Spaghetti Squash involves slicing a medium spaghetti squash in half, removing the seeds, seasoning with salt and pepper, and air frying cut side up until tender. The cooked flesh separates into spaghetti-like strands, making a low-carb alternative to pasta that can be served simply with butter or as a base for sauces.

Description

The recipe starts by washing and drying a medium spaghetti squash, slicing off one end for stability, then cutting it lengthwise in half. The seeds and stringy interior are scooped out before seasoning the cut surfaces with salt and black pepper. The halves are sprayed lightly with oil and placed cut side up in the air fryer basket.

Air frying at 370°F for about 18 minutes softens the squash, with additional time if needed until a fork pierces easily. After cooking, the flesh can be shredded with a fork to create noodle-like strands resembling spaghetti. These strands can then be eaten as is, with butter and herbs, or used in dishes as a pasta substitute.

This method is convenient and uses the air fryer to cook the squash evenly without boiling or baking. It yields a tender, mildly flavored vegetable pasta alternative with a slight bite. The recipe suggests using cooking spray oil instead of a commercial spray to avoid damaging the air fryer basket surface.

Ingredients

Servings
  • 1 spaghetti squash medium
  • Cooking spray oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and dry the squash. Slice the end off it and stand it on end. Use a sharp knife to cut it in half lengthwise.
  2. Use a spoon to scoop out the seeds and stringy bits that are inside.
  3. Spray the cut halves with a little bit of olive oil. Season with salt and pepper.
  4. Put it in the air fryer basket, cut side up. Air fry at 370 degrees F for 18 minutes.
  5. Check for doneness by sticking a fork in it. If it goes in easily it is done. If not continue to cook for another 3-5 minutes.
  6. To serve scrape the insides with a fork to get long strands.
  7. Serve the spaghetti squash strands with butter and herbs or use it as a base for a sauce.

Notes

  • Use oil in a spray bottle rather than commercial cooking sprays to protect the air fryer basket coating.
