Air Fryer Steak Bites Recipe

Air Fryer Steak Bites feature bite-sized sirloin or similar steak cuts seasoned with olive oil, Worcestershire sauce, thyme, salt, and pepper, cooked quickly in the air fryer to preferred doneness. The result is tender, juicy pieces with a flavorful exterior crust. Optional herb butter adds richness and fresh herb notes when served.

Description

This recipe starts with cubing steak into uniform sizes to ensure even cooking, then coating it with a simple marinade of oil, Worcestershire sauce, thyme, salt, and pepper. Tougher cuts benefit from a short marinade, while tender cuts like ribeye or NY strip can cook immediately. Preheating the air fryer ensures rapid searing.

Cooking times vary to reach medium-rare through well-done, flipping partway through to brown evenly on all sides. The air fryer promotes a seared outside and juicy interior with less mess than pan-frying. Check internal temperatures with a thermometer for accuracy.

Optional herb butter made with softened butter and fresh thyme or another herb can be added on top of the hot steak bites to melt in, adding a silky texture and fresh flavor that complements the meat. The bites serve well as appetizers or part of a main meal.

Cutting the meat into similar-sized cubes and not overcrowding the basket maximizes even cooking. Using a thermometer helps achieve desired doneness precisely.

Ingredients

Servings
  • 1 pound sirloin steak or ribeye, NY strip or similar cuts
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste

Optional Herb Butter

  • 1 tablespoons butter softened
  • 1/2 tablespoon thyme or another fresh herb, fresh

Instructions

  1. Cut the meat into bite-size pieces and place them in a medium bowl.
  2. Drizzle the oil over the meat pieces and add the Worcestershire sauce, thyme, salt, and pepper. Toss it to mix and coat the beef with the seasoning.
  3. If you are using a tough cut of meat let it marinate for 10-15 minutes. Sirloin, ribeye or NY strip shouldn't need to marinate.
  4. Preheat the air fryer at 400 F for 3 minutes. Then add the steak cubes to the air fryer basket. Don't overcrowd the basket and cook in batches if you need to.
  5. Total cooking time will depend on your desired degree of doneness. Here are approximate total cooking times.medium-rare: 7 minutesmedium: 8 minutesmedium-well: 10 minuteswell-done: 12 minutes
  6. Air fry at 400 F for 5 minutes. Then pull the basket out and flip the pieces over.
  7. Air fry for the remaining time for your desired degree of doneness, which will be 2-7 minutes more.
  8. Check the internal temperature of a few of the larger pieces.

To make the optional herb butter:

  1. Mix the softened butter with the fresh thyme.
  2. Add the herb butter to the cooked steak bites and stir so that it melts and coats them.

Notes

  • Cut steak into uniform pieces for even cooking.
  • Marinate tougher cuts for 10-15 minutes; tender cuts do not require marinating.
  • Use a meat thermometer to check internal temperature for desired doneness.
  • Substitute herb or garlic butter as preferred, or omit butter for a leaner option.
