Air Fryer Stuffed Chicken Breast

These Air Fryer Stuffed Chicken Breasts are incredibly juicy and tender. Flavored with a wonderful spice blend and stuffed with an irresistible 3 cheese combo, they're so good you will want to lick your plate clean! They are high in protein and low carb and keto friendly at only 1g net carbs per serving!

Ingredients

Servings
  • 4 (4-6 oz) chicken breast
  • 2 Tablespoons cooking oil of choice
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt

For the filling

  • 4 oz cream cheese at room temp
  • 1/4 cup Parmesan Cheese
  • 1/4 cup mozzarella cheese or favorite cheese
  • Optional add-in: sun-dried tomato 2 tablespoons, chopped; or pesto or feta cheese or green chili or spinach 1 cup chopped

Instructions

  1. Pre-heat air fryer to 375ºF. In a small bowl, combine the oil and seasoning and set aside. In another bowl, make the filling by combining the cream cheese, parmesan, mozzarella, and 2 tablespoons of your favorite add-in.
  2. Lay the chicken breasts flat on a cutting board. Place one hand on top to hold in place and then slice 3/4 of the way through the chicken breast (be careful not to slice all the way through).
  3. Spoon 1/4 of the cheese mixture into the middle of each chicken breast and fold so that the cream cheese mixture is sealed inside. Brush all sides of the chicken breasts with oil/seasoning mixture.
  4. Transfer to the air fryer basket and cook for 20 minutes, flipping halfway through or until cooked and the internal temperature reaches 165ºF.

  • Storing leftovers:
  • Refrigerate: Allow the chicken to cool completely, then transfer it to an airtight container. It can be stored for up to 3 days in the fridge. 
  • To reheat: You can place your chicken in the oven and bake it at 350 degrees for about 10 minutes or until it’s heated through. Or reheat in the air fryer at 350 degrees for about 5 minutes or until it's heated through.
