Description
This recipe starts by preparing chicken breasts that are sliced and pounded thin to create large flat pieces. Slices of mozzarella cheese are layered on the flattened chicken, then topped with a whipped filling of cream cheese, corn, garlic, green chilis, Mexican cheese, and cilantro. The chicken is rolled tightly around the filling and secured with toothpicks.
The rolls are coated sequentially in a seasoned flour mixture, beaten eggs, and panko breadcrumbs before being arranged in a preheated air fryer basket. Spraying the rolls lightly with nonstick spray helps to develop a crisp crust during air frying at 375°F. Cooking in batches is recommended to avoid overcrowding and ensure even crisping.
The finished chicken rolls have a crunchy exterior and a rich, cheesy filling that melds Mexican flavors with creamy textures. They pair well with Mexican cauliflower rice, mashed potatoes, or a fresh salad for a balanced meal.

Ingredients
- 4 chicken breast cut 3/4 way through horizontally, then pounded flat into large pieces, large
- 16 lices mozzarella cheese
- 1 cup corn (drained)
- 1 (8-oz pkg) cream cheese
- 1 tablespoon garlic minced
- 1 (4-oz can) green chili
- 1 cup Mexican cheese blend (shredded)
- 1/4 cup cilantro (chopped)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 2 egg well beaten
- 2 cups breadcrumbs (Recommend Panko breadcrumbs)
Instructions
- Preheat the air fryer to 375° for 5 minutes.
- Lay out a piece of flattened chicken and lay out 2-4 mozzarella cheese slices over the chicken.
- In a large mixing bowl, add the cream cheese, corn, garlic, green chilis, and Mexican cheese. Beat with a hand mixer until well combined. Spread a couple of spoons of the cream cheese mixture over the sliced cheese.
- Starting on one end, roll up the chicken as tight as you can without squishing out the filling.
- Use toothpicks to close the chicken.
- In a large shallow dish, combine the salt, pepper and flour.
- In a separate dish, add the beaten eggs
- In a third dish, add the breadcrumbs.
- Roll one chicken roll in the flour mixture, then roll in the eggs, and lastly in the bread crumbs.
- Place the breaded rolls in the air fryer, making sure the rolls are not packed too closely together. You may need to do a second batch.
- Spray the rolls with nonstick cooking spray, then place the air fryer basket back into the air fryer and set at 375° for 10 minutes.
- Flip the rolls over and spray with the nonstick cooking spray. Return to the air fryer and cook for another 15 - 20 minutes.
- Use a meat thermometer to check for doneness. Temperature should reach 165° when chicken is probed in the middle of the roll.
- Remove and serve immediately with your favorite side dish.
- Remember to remove the toothpicks before serving.
Notes
- Chicken breasts can be purchased already filleted or prepared by slicing horizontally and pounding thin.
- Serve with Mexican cauliflower rice, rice, mashed potatoes, or a salad for a complete meal.
- These chicken rolls can be baked at 350°F for 25 minutes or fried as alternatives to air frying.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
