Description
The recipe starts by rinsing and drying medium mushrooms, then removing stems and optionally hollowing out the centers. Cream cheese is whipped until smooth and fluffy, then combined with crumbled cooked bacon, shredded cheddar, grated Parmesan, garlic powder, salt, smoked paprika, and sliced green onion. This mixture is spooned generously into the mushroom caps.
Preheated air fryer cooks the stuffed mushrooms initially at 400°F before reducing to 350°F to finish cooking. After six minutes, a final sprinkle of cheddar is added on top, and they cook a few minutes more to melt the cheese and develop a golden crust. The result is tender mushrooms with a rich, creamy, and smoky filling highlighted by the cheeses and bacon.
For stability during cooking, mushrooms can be placed on foil with raised sides or in a small baking pan to prevent tipping inside the air fryer. Letting the mushrooms cool slightly before serving helps fillings set and makes handling easier.
Ingredients
- 16 medium mushrooms
- 8 ounces cream cheese softened
- 2 tablespoons Bacon about 3 slices, cooked and crumbled
- ⅓ cup cheddar cheese divided, shredded
- 2 tablespoons Parmesan Cheese grated
- ¼ teaspoon garlic powder
- ¼ teaspoon kosher salt or to taste
- ⅛ teaspoon smoked paprika
- 1 green onion thinly sliced
Instructions
- Quickly rinse and dry mushrooms.
- Remove the stem from the mushroom caps (and scoop out the center using a small spoon if desired).
- Beat softened cream cheese with a mixer on medium until smooth and fluffy.
- Add bacon, 3 tablespoons cheddar cheese, parmesan cheese, seasonings, and green onion.
- Stuff the mixture into the mushroom caps.
- Preheat air fryer to 400°F. Add mushrooms, reduce heat to 350°F. Cook mushrooms 6 minutes.
- Open the air fryer and top mushrooms with remaining cheddar. Cook 2 minutes longer.
- Cool 5 minutes before serving.
Notes
- If mushrooms tip inside the air fryer, place them on foil with sides folded up or in a small baking pan to keep upright during cooking.
