Air Fryer Stuffed Peppers

Report
Air Fryer Stuffed Peppers feature halved bell peppers filled with a savory mixture of cooked rice, spinach, cherry tomatoes, and sun-dried tomato pesto, topped with crumbled feta. The peppers are pre-cooked and finalized in the air fryer for a tender yet firm texture and vibrant flavors. This method offers a practical way to enjoy stuffed peppers with a roasted finish and well-balanced filling.

Description

This recipe uses bell peppers halved lengthwise, deseeded, briefly air-fried to soften them before stuffing. The filling consists of cooked rice combined with sautéed shallots, garlic, spinach, cherry tomatoes, and sun-dried tomato pesto, bringing earthiness and acidity to the mix. Crumbled feta cheese provides a salty and tangy topping placed before the final air fryer cooking step.

The air fryer cooks the peppers evenly, giving them a tender texture without making them mushy, while maintaining the filling's moisture and fresh flavors. The combination yields a colorful and nutritionally balanced dish with wholesome vegetables, grains, and cheese.

These stuffed peppers work well as a light main course or side dish. Using similarly sized peppers ensures uniform cooking, and arranging them without overlap in the air fryer allows proper air circulation. Cooking times may vary depending on air fryer models, so checking for doneness is advisable.

Adjust pepper placement as needed for flat resting and make sure they have space to cook thoroughly. The recipe utilizes sun-dried tomato pesto to add depth without needing extra seasoning.
