Description

Air Fryer Twice Baked Potatoes begin with fully baked potatoes, halved and hollowed out to separate the flesh. This flesh is combined with sour cream, butter, and part of the shredded cheddar cheese, producing a creamy, rich filling. After mashing to desired consistency, the mixture is spooned back into the potato shells and chilled until ready to cook.

Placed in an air fryer at 400°F, the potatoes cook until the skins regain crispness and the filling heats through. Remaining cheddar cheese and cooked bacon bits are added on top partway through air frying to melt cheese and crisp the bacon. This two-stage cook enhances both flavor and texture, creating a balance between smooth filling and crispy exterior.

  • 2 potato cooked, baked
  • 2 Tablespoon sour cream
  • 1/2 cup cheddar cheese
  • 1 Tablespoon butter
  • 2 lices Bacon cooked

Instructions

  1. Cut the baked potatoes in half and scoop out the insides into a bowl.
  2. Add the sour cream, 1/4 cup of cheddar cheese and the butter to the bowl with the potatoes.
  3. Mash the potatoes and other ingredients together with a potato masher until they have reached your desired consistency.
  4. Spoon the filling back into the potato shells, mounding it to fit as necessary.
  5. Refrigerate until ready to serve.
  6. When you are ready to bake the potatoes put them in an air fryer basket. Cook at 400 F for 8 minutes.
  7. Top the potatoes with the remaining 1/4 cup of cheddar cheese and bacon bits. Be careful not to touch the hot sides of the air fryer basket while you do this.
  8. Return the potatoes to the air fryer and cook for 2 more minutes at 400 F to melt the cheese and crisp the bacon.

Notes

  • For oven preparation instead of air fryer, bake at 350°F for 20 minutes, then top with cheese and bacon and bake an additional 5 minutes to melt.
  • Use fully baked potatoes, cooled slightly, for best mash texture when mixing with sour cream and cheese.
  • Handle air fryer basket carefully when adding toppings to avoid burns from hot surfaces.
