Air Fryer Veggie Burgers

These Air Fryer Veggie Burgers use mashed white beans combined with oats, fresh herbs, diced onion and bell pepper, and spices including Italian seasoning, cumin, smoked paprika, and garlic powder. The mixture is shaped into patties and cooked in the air fryer until golden and firm. They provide a hearty, flavorful vegetarian option with a tender yet sturdy texture suitable for sandwiching in buns with toppings.

Description

The recipe begins by mashing rinsed white beans, then adding oats, chopped cilantro, finely diced onion and bell pepper, lemon juice, sriracha or tomato sauce, and a blend of Italian seasoning, cumin, smoked paprika, garlic powder, and salt. After mixing, the mixture is divided into patties and cooked in the air fryer at 350°F (180°C) for 9-10 minutes, flipping midway, until browned and cooked through.

These veggie burgers have a balanced texture due to the oats and beans, with fresh herbs and spices contributing bright and slightly smoky flavor notes. The recipe also includes alternative cooking methods, such as using a crisping lid in an Instant Pot or pan-frying to achieve a golden crust.

They fit well into sandwiches with buns and various toppings like lettuce and tomatoes. Refrigerating the patty mixture for 20-30 minutes before forming can help firm it up and ease shaping. Adjust cooking times for thickness and add a bit if cooking from frozen.
