Air Fryer Walleye

Air Fryer Walleye delivers crispy, flavorful fish fillets coated in a seasoned pork rind crust. The coating incorporates garlic powder and cayenne pepper for a mild kick, while the air fryer ensures a crunchy texture without deep frying. Using just an egg and crushed pork rinds as breading keeps the preparation straightforward and gluten-free. The fillets cook quickly at 400°F, making this a practical choice for a satisfying fish dinner. Serving with lemon wedges brightens the taste and complements the rich crust.

Description

Air Fryer Walleye features tender walleye fillets coated in crushed pork rinds mixed with garlic powder and cayenne pepper, giving a flavorful and mildly spicy crust. The use of egg wash helps the pork rind crumbs adhere evenly to the fish. The fillets are arranged on a lightly greased air fryer rack and cooked at 400 degrees Fahrenheit for about 10 minutes, developing a crispy exterior while keeping the interior moist. Flipping the fillets halfway is optional depending on your preference and air fryer size.

Serve the cooked fillets with lemon wedges to add a fresh, acidic note that balances the richness of the crust. This method avoids deep frying, reducing overall oil use while maintaining a satisfying crunch. It is suitable for those seeking a crisp fish recipe using an air fryer appliance.

Depending on your air fryer capacity, you may need to cook the fillets in batches to ensure they crisp evenly. The pork rind crust provides a gluten-free alternative to breadcrumbs and can be adjusted in seasoning for personal taste.

Ingredients

Servings
  • 4 walleye fillets
  • 1 large egg
  • 1 ounce pork rinds I used Old Dutch, bag of
  • 1 teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 lemon optional, cut into 8 wedges

Instructions

  1. Crush the pork rinds into crumbs. I pour them into a gallon bag and roll over them with a rolling pin until nice and crumbly.
  2. Add ¼ teaspoon of cayenne and 1 teaspoon of garlic powder to the gallon bag of pork rind crumbs and shake to combine. Pour the pork rind crumbs onto a plate.
  3. Crack an egg into a bowl and whisk until the white and yolk are combined.
  4. Dip a walleye fillet into the whisked eggs, making sure both sides get coated. Let the excess egg drip off.
  5. Dredge the walleye fillet in pork rind crumbs, making sure to completely coat on both sides.
  6. Spray a bit of cooking spray on the rack in your air fryer to ensure the fillets don’t stick.
  7. Put the walleye fillets on the air fryer rack (IMPORTANT, read notes*). Repeat with the remaining fillets.
  8. Fry at 400 degrees Fahrenheit for around 10 minutes. You can flip halfway through cooking, if desired, though I found I didn't need to.
  9. Serve with lemon wedges.

Notes

  • Work in batches if your air fryer rack cannot fit all fillets at once to ensure even cooking.
  • Spray the air fryer rack lightly with cooking spray before cooking to prevent sticking.
