  • 2 zucchini cut into half moons, medium
  • ¼ cup Parmesan Cheese grated
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Preheat your air fryer to 400°F for 5 minutes while you prepare the zucchini.
  2. Wash, dry and slice your zucchini into semi-thick slices, just shy of an inch, then cut into half moons.
  3. Dry the cut zucchini, then add them to a mixing bowl.
  4. Pour the olive oil, smoked paprika, garlic salt and ground black pepper over the top. Toss until well combined.
  5. Add in the parmesan cheese and toss again, making sure all the pieces all well coated. Pour into a single layer, with no pieces overlapping.
  6. Air fry for 10 minutes @400°F or until cooked through and golden, then serve.
  7. Store leftovers in an airtight container in the fridge for a few days.
