  • 2 tablespoons Parmesan Cheese shredded
  • 2 tablespoons panko bread crumbs
  • 1 tablespoon olive oil
  • ½ teaspoon basil dried
  • ¼ teaspoon oregano dried
  • ¼ teaspoon kosher salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions

  1. Cut the zucchini into ¾" chunks.
  2. In a medium bowl, combine zuccchini, Parmesan cheese, bread crumbs, olive oil, basil, oregano, salt, and pepper. Toss well to combine.
  3. Preheat the air fryer to 400°F.
  4. Add the zucchini mixture to the air fryer basket, in a single layer, and air fry for 5-7 minutes or until zucchini reaches desired tenderness.

Notes

  • Zucchini can be sliced into ½-inch rounds instead of chunks if preferred.
  • Store leftovers in an airtight container refrigerated up to 4 days and reheat in the air fryer for a few minutes to crisp.
