Description
Air Fryer Zucchini blends fresh zucchini chunks with a mixture of Parmesan cheese, panko bread crumbs, and dried herbs such as basil and oregano. Tossed in olive oil and seasoned with salt and pepper, the zucchini is cooked at a high temperature in an air fryer, allowing it to brown and crisp while maintaining a tender texture inside. Leftover zucchini pieces stay well for up to four days refrigerated and can be reheated briefly in the air fryer to regain their crispness. For ease, the zucchini can be sliced thinner if desired before cooking.
Ingredients
- 1 pound zucchini about 2 medium
- 2 tablespoons Parmesan Cheese shredded
- 2 tablespoons panko bread crumbs
- 1 tablespoon olive oil
- ½ teaspoon basil dried
- ¼ teaspoon oregano dried
- ¼ teaspoon kosher salt or to taste
- ¼ teaspoon black pepper or to taste
Instructions
- Cut the zucchini into ¾" chunks.
- In a medium bowl, combine zuccchini, Parmesan cheese, bread crumbs, olive oil, basil, oregano, salt, and pepper. Toss well to combine.
- Preheat the air fryer to 400°F.
- Add the zucchini mixture to the air fryer basket, in a single layer, and air fry for 5-7 minutes or until zucchini reaches desired tenderness.
Notes
- Zucchini can be sliced into ½-inch rounds instead of chunks if preferred.
- Store leftovers in an airtight container refrigerated up to 4 days and reheat in the air fryer for a few minutes to crisp.
