Description
Air Fryer Zucchini Chips start with thinly sliced zucchini pieces, about 1/8 to 1/4 inch thick for even cooking. The slices are dredged sequentially through a flour mixture seasoned with salt, pepper, and paprika, then dipped in beaten eggs. Next, they are coated with a breadcrumb mixture combining panko and finely grated Parmesan cheese which crisps up nicely in the air fryer. Arranged in a single layer and lightly sprayed with oil, the zucchini chips are air fried at 400°F for 6-8 minutes, flipping halfway to achieve even browning. The final chips are crispy on the outside with a slight chew from the zucchini inside. They are best served immediately as a snack or side dish.

- Preheat air fryer at 400F for 5 minutes
- Dip the zucchini in the flour mixture, then egg, and then the breadcrumbs and place on a baking rack.
- Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
- Fry at 400F for 6-8 minutes, flip at 4 minutes .
- Cook until chips are browned and crispy
- Add any additional salt or pepper to taste
- Serve immediately
- Store leftovers in refrigerator in airtight container
