Our nearly foolproof air fryer recipe makes no breading parmesan zucchini chips that are crispy, crunchy, deliciously addictive, and happen to be keto-friendly!

Ingredients
- 1 medium zucchini
- 1/8 teaspoon salt
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ¼ teaspoons ground black pepper
- 3 tablespoon grated Parmesan cheese

Instructions
- Set out a mandolin slicer, a medium bowl, and an air fryer. Adjust the mandolin slicer to slice at 1.5 mm. (On my mandolin this is the third smallest notch.)
- Slice the zucchini into thin rounds, being extra careful when you get close to the end. *If you’re mandolin has a handguard, use it!
- Place the zucchini chips in the bowl and sprinkle with 1/8 teaspoon of salt. Toss well and allow the zucchini chips to sweat out their moisture for at least 10 minutes.
- Place a long piece of paper towel on the countertop. Preheat the air fryer to 350°F.
- Once the zucchini chips have had time to sweat, pour off the excess moisture and lay the zucchini chips in a flat layer on the paper towels. Press them gently to remove as much moisture as possible.
- Move the zucchini chips back to the bowl. Drizzle with olive oil, then sprinkle with garlic powder, and black pepper. Toss well to coat the zucchini chips in the seasoning.
- Carefully lay a single layer of zucchini chips in the hot air fryer basket. Air fry the zucchini chips for 5 minutes. Use tongs to flip the zucchini chips over.
- Sprinkle the tops of the zucchini chips with Parmesan cheese. (This is important because it helps weigh down the zucchini chips so they don’t blow around as they dry out in the air fryer.)
- Then air fry for another 5 to 6 minutes depending on your machine. Repeat in small batches with the remaining zucchini chips.
Notes
- We tested this recipe so many ways in multiple air fryers. Some air fryers have extra-strong blowers and will push the thin chips into one corner causing them to not cook evenly. Flipping the chips and coating them and Parmesan makes a big difference!

- This recipe offers a wonderful low-carb option for chip lovers, but zucchini is so moist, that it is not possible to air fry them in a way that makes them storable at room temperature, like store-bought chips. These little guys need to be made and enjoyed on the same day.
