These Air Fryer Zucchini Chips are golden, crispy, and perfectly seasoned!

Ingredients
- 1 ¼ cups Panko bread crumbs
- 2 tablespoons cornmeal
- ⅓ cup grated Parmesan cheese
- ½ teaspoon dried basil
- ¼ teaspoon dried oregano
- ⅛ teaspoon cayenne pepper
- 1 medium zucchini cut into ¼" slices
- 1 egg beaten

Instructions
- Preheat air fryer to 375°F.
- Combine bread crumbs, cornmeal, parmesan cheese, and seasonings in a small bowl.
- Toss zucchini with beaten egg. Remove zucchini from egg allowing excess to drip off and dip into breadcrumb mixture gently pressing to coat.
- Place zucchini in the air fryer in a single layer and cook 8 minutes. Flip and cook an additional 6-8 minutes or until crisp and zucchini is tender.
- Repeat with remaining zucchini.
Notes
- To prepare in batches, undercook zucchini by 1-2 minutes, removing it from the air fryer while still slightly crisp. Once all zucchini is cooked, gently place it all in the air fryer for 3 minutes to heat through.
- Reheat in the air fryer at 375°F for 3-5 minutes or until heated through.
