  • salt
  • black pepper
  • 2 teaspoons Kinder's seasoning blend (optional)
  • 3 tablespoons butter or avocado oil, melted
  • 1 cup panko bread crumbs (seasoned or unseasoned)
  • 1/3 cup Parmesan Cheese grated
  • cooking spray (to taste)

Instructions

  1. Rinse and pat dry zucchini and slice into spears.
  2. Place zucchini in a bowl or zip-top baggie and toss with salt, pepper, and seasonings. Add butter and toss to coat. Combine breadcrumbs and parmesan cheese in a shallow dish and mix until combined. Place zucchini spears in the crumb mixture one at a time and turn over until completely coated in crumbs.
  3. Place breaded zucchini in a single layer in the air fryer and spray generously with cooking spray.
  4. Air fry at 400 degrees for 10-12 minutes or until breading becomes golden brown.
