Ingredients
For the Zucchini Fries:
- 2 zucchini medium, cut into fries
- ½ cup almond flour
- ½ cup Parmesan Cheese grated
- ¼ cup pork rinds ground, plain
- 1 teaspoon garlic sea salt
- 1 teaspoon parsley dried
- 1 teaspoon basil dried
- ½ teaspoon oregano
- 2 egg beaten
For the sauce
- ½ cup mayonnaise
- 2 teaspoons horseradish prepared
- 2 tablespoons ketchup no sugar added
- 1 teaspoon smoked paprika
- 1 teaspoon garlic salt
- ½ teaspoon lemon juice fresh
Instructions
- Preheat your air fryer to 400°F. Wash, dry and cut your zucchini into fries for sticks.
- Add the almond flour, parmesan cheese, ground pork rinds, oregano, parsley, basil, garlic salt and pepper into a bowl and whisk to combine. To get a finer texture, I like to blend mine in a food processor.
- Take the eggs and beat them in a shallow bowl. Dip each zucchini fry into the egg, allowing any excess egg to drip off. Then dip them into the breading to get a thin coating.
- Place the breaded fries in the basket of your air fryer.Spray them down with olive oil, I prefer to use this sprayer, rather than the aerosol store bought type.
- Air fry for 15-20 minutes or until golden.While the fries are cooking, add all the zipping sauce ingredients into a small mixing bowl.
- Whisk to combine and set aside at room temperature until the fries are ready. Serve on the side of the zucchini fries.
Notes
- Smaller zucchini may only require one egg for the breading step.
