Description

To prepare, medium zucchinis are sliced into fries and dipped in beaten egg before coating in a seasoned blend containing almond flour, grated Parmesan, ground pork rinds, and dried herbs like oregano, parsley, and basil, along with garlic salt and pepper. This breading mixture creates a crispy outer layer when cooked in the air fryer at 400°F.

Fries are air-fried for 15 to 20 minutes until golden brown. Meanwhile, a dipping sauce is prepared by whisking mayonnaise with horseradish, no-sugar ketchup, smoked paprika, garlic salt, and lemon juice, adding a zesty accompaniment.

This recipe yields crunchy, flavorful zucchini fries with a satisfying texture that contrasts the tender interior of the vegetable. They make a good snack or side, served warm with the sauce on the side.

For the Zucchini Fries:

  • 2 zucchini medium, cut into fries
  • ½ cup  almond flour
  • ½ cup Parmesan Cheese grated
  • ¼ cup pork rinds ground, plain
  • 1 teaspoon garlic sea salt
  • 1 teaspoon parsley dried
  • 1 teaspoon basil dried
  • ½ teaspoon oregano
  • 2 egg beaten

For the sauce

  • ½ cup mayonnaise
  • 2 teaspoons horseradish prepared
  • 2 tablespoons ketchup no sugar added
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic salt
  • ½ teaspoon lemon juice fresh

Instructions

  1. Preheat your air fryer to 400°F. Wash, dry and cut your zucchini into fries for sticks.
  2. Add the almond flour, parmesan cheese, ground pork rinds, oregano, parsley, basil, garlic salt and pepper into a bowl and whisk to combine.  To get a finer texture, I like to blend mine in a food processor.
  3. Take the eggs and beat them in a shallow bowl.  Dip each zucchini fry into the egg, allowing any excess egg to drip off. Then dip them into the breading to get a thin coating.
  4. Place the breaded fries in the basket of your air fryer.Spray them down with olive oil, I prefer to use this sprayer, rather than the aerosol store bought type.
  5. Air fry for 15-20 minutes or until golden.While the fries are cooking, add all the zipping sauce ingredients into a small mixing bowl.
  6. Whisk to combine and set aside at room temperature until the fries are ready. Serve on the side of the zucchini fries.

Notes

  • Smaller zucchini may only require one egg for the breading step.
  • Using a food processor to blend the breading ingredients finely helps achieve an even coating for crispier fries.
  • Weighing ingredients and adjusting based on zucchini size provides more precise nutritional calculations.
