Air Fryer Zucchini Fries

Healthy bread zucchini fries that are made in your Air Fryer for an easy side dish!

Ingredients

  • 2 zucchini medium
  • ½ c. all-purpose flour
  • 2 egg beaten, large
  • 1 c. panko bread crumbs Italian style
  • ½ c. Parmesan Cheese freshly grated
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper ground
  • 2 Tbsp parsley chopped fresh leaves

Instructions

  1. Slice the zucchini in half, then half again, then into quarters. You should have 16 slices per zucchini.
  2. In a shallow bowl, pie plate or cake pan combine the Panko, Parmesan cheese, garlic powder, salt and pepper. Set aside.
  3. In a shallow bowl, pie plate or cake pan whisk eggs and in another pan add the flour.
  4. Dip the zucchini in the flour, then into eggs and then dredge in the Panko mixture, pressing to coat.
  5. Place zucchini in an Air Fryer basket in a single layer, you may need to work in batches. Generously spray zucchini with cooking spray.
  6. Cook for 8-10 minutes at 400 degrees F or until crispy and golden brown.

Notes

  • Breading Tip: To make the breading easier (and less messy) try to keep one hand dry and only use it to coat the pieces in the flour and bread crumbs. Use your other hand for the egg mixture. This will help keep your breadcrumbs dry!
  • Cooking Tip: If you are cooking them in batches, keep the ones that are done in a low oven on a sheet pan. That way, they stay warm as you finish cooking the rest!
  • Serving Tip: These are great as a healthy appetizer with dipping sauces on the side or serve it as a side dish. We love them with pork, chicken, and with hamburgers!
  • Storage Tip: These are best when they are hot and crispy from the air fryer. If you have leftovers, they will keep for a few days in the refrigerator, but the breading will soften.
