Air Fryer Zucchini Pizza Bites
Description
The process begins by slicing medium zucchini into approximately half-inch thick rounds. These slices are sprinkled with kosher salt to season and possibly reduce moisture. The zucchini is arranged in an air fryer, in one or multiple layers if rack stacking is available, and cooked at 375°F for 7 minutes until softened. Afterward, a small amount of pizza sauce is spread on each slice, followed by shredded mozzarella, pepperoni slices, and a sprinkle of fresh Parmesan cheese. The bites return to the air fryer for 2 to 3 more minutes at the same temperature to melt the cheese and warm the toppings.
The final result is a snack with a soft but slightly crisp zucchini base and gooey, flavorful pizza toppings reminiscent of mini pizzas. They can be served hot and are suggested to pair well with a side of ranch dressing for dipping to add a creamy note.
Ingredients
- 2 zucchini medium-sized
- kosher salt to taste
- 1/3 cup pizza sauce
- 1/3 cup mozzarella cheese shredded
- 1/2 cup pepperoni or to taste
- Parmesan Cheese to taste, fresh
Instructions
- Cut zucchini into slices cross-wise, appx 1/2" thick (or as thick as you would like them).Spray your air fryer rack with cooking spray to prevent sticking. Place zucchini slices evenly on the rack and sprinkle with salt. If you have racks that stack, you can stack 2-3 layers, otherwise you may have to cook in batches.
- Cook in your air fryer at 375-degrees for 7 minutes. Remove from air fryer and spread a little pizza sauce on each slice.
- Add cheese, pepperoni, and fresh parmesan cheese and return to the air fryer.
- Cook for 2-3 minutes at 375-degrees or until cheese is melted. Serve hot. Tip: For extra flavor, dip your cooked pizza bites in some homemade ranch dressing. Yum!
