Air Fryer Zucchini Stuffed With Hamburger (Keto & Low Carb)
Description
The recipe begins by halving zucchinis lengthwise and scooping out the seeds to form a cavity for the filling. The zucchinis are seasoned with salt, pepper, and Italian seasoning both inside and on the surface. Ground beef is browned with garlic and Italian seasoning then simmered with tomato sauce to form a flavorful filling.
After assembling, the beef mixture is spooned into the hollowed zucchinis, which are topped with grated mozzarella cheese. The stuffed zucchinis are then placed in an air fryer basket or air fryer-compatible dish and cooked until the zucchini softens and the cheese melts and browns slightly.
This dish offers a satisfying combination of tender zucchini and rich, meaty filling with a melted cheese topping. It suits low-carb or ketogenic diets where vegetable boats provide a vegetable base for a hearty protein and cheese filling.
The use of an air fryer reduces cooking time and concentrate flavors without extra oil. This recipe allows for easy customization by adjusting seasonings or cheese toppings.
