Description
This recipe begins by scrubbing and drying russet potatoes, optionally peeling them, then slicing into uniform ⅓-inch thick sticks about 4 inches long to ensure even cooking without breakage. A 15-minute soak in water helps remove starch for better crisping. After drying, the fries are tossed with neutral oil, garlic powder, kosher salt, Kashmiri red chili powder, turmeric, and garam masala, giving a warm, aromatic seasoning profile.
The air fryer preheated to 400°F crisps the fries over about 25 minutes at 380°F with occasional shaking to ensure even browning. These fries develop a golden exterior with a spiced crust and a soft, fluffy inside. The inclusion of chili powder and turmeric imparts a subtle warmth and earthiness not found in plain fries.
If an air fryer basket is small, cooking in batches is recommended for even results. The recipe can adapt to conventional oven baking at 425°F, though results may not be as crisp. Fry seasoning and cooking time can be adjusted for smaller portions or personal preferences.
Ingredients
- 2 russet potato medium
- 4 cups water for soaking
- 2 tablespoons neutral cooking oil generic cooking oil
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon Kashmiri red chili powder
- ¼ teaspoon Turmeric ground
- ¼ teaspoon garam masala
- ¼ teaspoon chat masala optional
Instructions
- Scrub and rinse the potatoes well under running water. Wipe well with paper towels. Peeling is optional and I would recommend making these fries with potato skin.
- Cut the potatoes into long ⅓ inch thick sticks. Ideally, they should be about 4 inches long, to prevent them from breaking. Place the cut potatoes in a medium-sized bowl and add water to the bowl. Allow the cut potatoes to soak for 15 mins.
- After 15 minutes, drain all the water out and place the potatoes on a kitchen towel and wipe them dry.
- Add dried potatoes to a clean and dry bowl. Add oil, garlic powder, salt, red chili powder, turmeric, and garam masala. Toss so that the potatoes evenly coated with all the spices.
- Preheat the air fryer at 400°F for 5 minutes. Spray the basket with oil. Place the fries in the air fryer basket, evenly spreading and crisscrossing the overlapped fries. If your air fryer basket is small you may want to cook the fries in 2 batches.
- Air Fry at 380°F or 190°C for 25 mins. Shake the basket halfway through. If you like more crunchy fries, cook for an additional 2 to 3 minutes.
Notes
- Cook in batches if your air fryer basket cannot fit all fries in a single layer for best crispness.
- When halving the recipe, reduce air frying time to about 14-15 minutes.
- Oven baking is an alternative at 425°F for 20-25 minutes with flipping halfway, but fries may be less crisp.
