Aji Amarillo Sauce – Recipe
Description
Aji Amarillo Sauce begins with fresh aji amarillo peppers, combined with onion, garlic, and olive oil to form a thick, flavorful paste. Mixed with mayonnaise, crema or sour cream, tomato paste, minced shallot, and lime juice, it becomes a creamy sauce that balances mild heat with tanginess and richness. The shallot contributes subtle sweetness and texture, while the tomato paste adds depth, and lime juice brightens the overall taste.
The sauce works well as a condiment alongside grilled meats, seafood, or as a dipping sauce. Its creamy consistency lends itself to spreading or dolloping, bringing a distinct South American flavor component. Adjusting the seasoning with salt and pepper ensures a well-rounded taste.
