Alabama White Sauce Grilled Chicken

Alabama White Sauce Grilled Chicken features tender chicken breasts coated in a tangy, creamy mayonnaise-based sauce seasoned with vinegar, mustard, and garlic salt. The chicken is grilled to develop a slight char and brushed repeatedly with the zesty white sauce for moistness and flavor. This preparation offers a unique barbecue variation with a bright, tangy profile.

Description

The recipe starts by blending mayonnaise, buttermilk, vinegar, prepared yellow mustard, black pepper, salt, sugar, and garlic salt to make Alabama White Sauce. Chicken breasts are seasoned with barbecue dry rub and grilled over medium-high heat. The cooking process involves turning the chicken every few minutes and basting repeatedly with the white sauce, allowing it to caramelize and coat the meat evenly.

This method produces juicy grilled chicken with a creamy, tangy exterior that is distinct from traditional tomato-based barbecue sauces. The sauce also serves well as a complement when served on the side.

A practical tip for preparation is to portion out the sauce into a small bowl for basting to prevent contamination from raw chicken juice, preserving the remaining sauce for serving or later use.

Ingredients

Servings

For the white sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons buttermilk
  • 2 tablespoons vinegar
  • 1 teaspoon yellow mustard prepared
  • 1/2 teaspoon black pepper ground
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 teaspoon garlic salt

For the chicken:

  • 1.5 pounds chicken breast boneless skinless

Instructions

  1. To prepare the white sauce, combine all of the ingredients in a bowl or mason jar. Stir to combine and refrigerate for at least 30 minutes before using.
  2. To make the chicken, preheat the grill to 400 degrees.
  3. Coat the chicken in the barbecue dry rub. Place the chicken on the grill and cook for 3 minutes.
  4. Turn and brush with the white sauce. Cook for 3 more minutes. Turn and brush with the sauce again.
  5. Continue turning and coating every 3 minutes until the chicken is cooked through, about 10 minutes total.
  6. Serve the extra sauce on the side.

Notes

  • Use a separate bowl for basting sauce to avoid cross-contamination from raw chicken.
