Description

This recipe begins by boiling medium-sized potatoes with their skins on until tender. Once cooled, the skins are removed and the potatoes riced for a smooth texture. The riced potatoes are mixed with drained albacore tuna, parmesan cheese, chopped parsley, eggs, olive oil, and salt to taste. Breadcrumbs are added gradually to bind the mixture until it can be shaped easily by hand.

The mixture is formed into balls using an ice cream scooper, shaped, and rolled in extra breadcrumbs to coat the outside. Croquettes are then pan-fried in hot cooking oil until they develop a golden-brown crust, ensuring a crispy exterior and a moist, flavorful interior infused with cheese and herbs. The fried croquettes are drained on paper towels to remove excess oil before serving.

Ingredients

  • 2 potato medium-size
  • 25 ounces albacore tuna drained
  • cup Parmesan Cheese esan cheese
  • 2 egg
  • 2 tablespoons parsley chopped
  • salt
  • 2 tablespoons olive oil live oil
  • cup breadcrumbs + extra for breading the croquettes
  • cooking oil for frying

Instructions

ASSEMBLING

  1. In a large pot place the 2 potatoes, skin on, and cover with water. Place over high heat and boil until pierced with the knife, you feel no resistance, and the potatoes are done. Remove, drain and when ready to handle, remove the skin and place the potatoes thru a ricer and place into a bowl.
  2. Add the tuna, olive oil, cheese, parsley, eggs, and salt to taste, and mix well. Add a handful of the breadcrumbs at a time and incorporate them well until you will be able to work it with your hands easily.
  3. In a plate or bowl add breadcrumbs. With an ice cream scooper, grab some of the potato mixtures and drop them in your hands and form a perfect ball. Roll in the breadcrumbs and set aside until all the potatoes and tuna mixture is done.

FRYING INSTRUCTIONS

  1. In a large skillet over high heat warm the frying oil. Fry the croquettes moving them to evenly fry them. On a cutting board, place paper towels to cover the wood, add a cooling rack over it and once the croquettes are done, place them over the cookie sheet.

BAKING INSTRUCTIONS

  1. Preheat oven to 375F. Cover the bottom of a cookie sheet with parchment paper and place the croquettes. Slightly flatten them to cook better. Sprinkle some olive oil over them and bake for 30 minutes, turning them once halfway thru.
