Description

This recipe begins by cooking bowtie pasta in well-salted boiling water until tender. In a large skillet, onions and sliced chicken breast are sautéed in butter or olive oil until the chicken is cooked through. Mushrooms and garlic are added and cooked until soft. Chicken broth and diced fire-roasted tomatoes are stirred in and simmered to develop flavor.

Artichokes from a jar or can, along with heavy cream, are added to create a creamy, slightly tangy sauce. The cooked pasta is combined with the sauce and allowed to simmer briefly, allowing flavors to meld.   • 3 Tablespoons butter or olive oil
  • 1/2 onion (diced)
  • 4 garlic minced or 1/2 teaspoon Garlic Powder, cloves
  • 1 1/2 lbs. chicken breast (sliced)
  • 1 cup mushroom sliced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3/4 cup chicken broth
  • 1 - 14 ounce fire-roasted tomato diced, canned
  • 1 cup Artichoke from a jar or can, diced
  • 1 cup heavy cream
  • 1 1/2 cups Parmesan Cheese
  • 1/4 cup basil fresh
  • 10 ounces bowtie pasta (Farfalle)

Instructions

  1. In large pot, heat water over high heat until boiling. Generously salt water (very important). Once water is boiling, cook pasta according to package instructions.
  2. Meanwhile, heat a large skillet over medium heat. Add butter or olive oil and cook onion and chicken breast for 5 minutes. Add mushrooms and garlic and cook until onions are tender and chicken is no longer pink. Sprinkle with salt and pepper.
  3. Add chicken broth and tomatoes and let simmer for 5-10 minutes. Add artichokes and heavy cream and stir. Add cooked pasta and let simmer for 2-3 minutes. Check to season and add more salt and pepper to taste.
  4. Top with fresh basil and a generous serving of parmesan cheese.
