Kinamatisang Baboy

Kinamatisang Baboy is a Filipino pork belly stew simmered in a tomato-based broth with garlic, onion, and fish sauce, then finished with tender pechay (bok choy). The pork becomes tender after simmering slowly, absorbing the tangy tomato flavor and savory seasoning. The dish balances richness from pork belly with freshness from the greens, creating a comforting meal often served hot as a soup or stew.

Description

This Kinamatisang Baboy recipe features pork belly pieces cooked with aromatics like garlic, onion, and ripe tomatoes. Starting by sautéing the garlic and onion until soft, the tomatoes are added to create a foundation of flavor. Pork belly chunks are browned slightly in the pan, then simmered in water with fish sauce and black pepper, allowing the meat to become tender while releasing its flavorful fat into the broth.

Once the pork is tender, salt is adjusted as needed, and the bok choy (pechay) is added last to maintain its texture and color, simmered briefly just until wilted. The resulting stew combines the hearty richness of pork with a bright, slightly sour tomato broth and fresh greens, perfect for a warm, satisfying meal.
