Almond Butter Baked Oatmeal with Sticky Cinnamon Figs
Description
Almond Butter Baked Oatmeal with Sticky Cinnamon Figs is a hearty breakfast dish where oats are mixed with sugar, baking powder, salt, eggs, milk, almond butter, butter, and vanilla, then baked to a golden brown. The almond butter enriches the oatmeal with a nutty depth, while the eggs and milk contribute to a custard-like setting. The final texture is tender and moist with a slightly crisp top.
The accompanying sticky cinnamon figs are gently cooked in butter, honey, cinnamon, and salt until they develop a sticky, syrupy glaze. This sweet and spiced topping provides a contrasting texture and flavor to the creamy oatmeal.
Serve the baked oatmeal in squares topped with the warm figs and optionally drizzled with milk or cream for extra richness. This combination works well for a comforting morning meal, offering both sweetness and a satisfying texture.
The fig topping should be served immediately after cooking to preserve its sticky glaze. The recipe’s inclusion of almond butter gives added richness and can be varied with the choice of milk and toppings.
Ingredients
- 4 1/2 cups quick oats
- 3/4 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 egg large
- 2 cups milk dairy or nondairy, prefer whatever type
- ½ cup almond butter melted
- ¼ cup butter melted
- 2 teaspoons vanilla extract
- milk or cream for drizzling
- almonds for topping, sliced
sticky cinnamon figs
- 8 to 10 figs
- 2 tablespoons butter unsalted
- 4 tablespoons honey
- ¼ teaspoon ground cinnamon
- Pinch salt
Instructions
- Preheat the oven to 350 degrees Spray a 9x13 inch baking dish with nonstick spray.
- In a large bowl, whisk together the oats, sugar, baking powder and salt. In a smaller bowl, whisk together the eggs, milk and vanilla extract. Add the wet ingredients to the dry and stir until combined. Stir in the melted butter and almond butter until combined. Pour the mixture in the dish.
- Bake for 35 to 40 minutes, or until the top is golden brown and set. Remove the dish from the oven. Let cool slightly, then cut into squares. Serve with the sticky figs and a drizzle of milk or cream.
sticky cinnamon figs
- Slice the figs in half or in quarters. Heat a skillet over medium heat and add the butter.
- Place the figs in the skillet and drizzle with honey. Sprinkle them with cinnamon and a pinch of salt.
- Cook the figs, tossing once or twice, for 5 to 6 minutes. You want honey and butter to create a syrupy sticky sauce in the bottom of the pan. Once the figs are finished, serve them immediately on top of the oatmeal.
Notes
- The sticky cinnamon figs topping should be served immediately for best texture and flavor.
- You can drizzle milk or cream over the oatmeal squares to enhance moistness when serving.
- Quick oats bake into a tender but structured oatmeal; do not overbake to maintain moistness.
- The almond butter adds richness and a subtle nutty flavor that balances the sweetness of the figs.
