  • 2 ½ cups rolled oats old fashioned
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 2 egg large
  • 1 ¼ cups milk any variety
  • ½ cup bananas roughly 1 banana, mashed
  • ¼ cup maple syrup
  • cup almond butter melted, creamy
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F. Spray a muffin tin with nonstick baking spray.
  2. In a small bowl, whisk together the oats, baking powder, cinnamon and salt.
  3. In a large bowl, whisk together the eggs, milk, bananas and maple syrup. Whisk in the melted almond butter. Whisk in the vanilla extract.
  4. Stir the dry ingredients into the wet ingredients until just combined. Divide the mixture evenly between the 12 muffin tins. Sprinkle on sliced almonds or mini chocolate chips if you’d like something on top.
  5. Bake for 25 minutes, or until set and golden. Remove and serve with a drizzle of almond butter, nuts, seeds or your favorite jam.
