  • 1 Ib salted butter 2 cups, room temperature
  • 3 cups icing sugar
  • 1 cup heavy cream
  • 1/2 cup almond paste softened
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 3 egg yolks
  • 2 large eggs

Instructions

  1. Add the icing sugar, whole eggs, egg yolks, and almond paste, into a medium-sized bowl and beat until the mixture is light and fluffy.
  2. Pour in the cream, vanilla extract, and almond extract and beat to combine.
  3. Transfer the mixture to a saucepan and cook on medium-low heat for 5 minutes, then lower the heat and simmer for 4 minutes.
  4. Strain the mixture into a bowl and refrigerator for 2 hours.
  5. Remove from the fridge and beat in the butter until the icing is fluffy.
  6. Transfer into an air-tight container. It will keep up to a week in the refrigerator.
