Description
To create Almond Flour Biscuits, almond flour (or almond meal) is mixed with baking powder and salt if desired. Eggs and melted butter are whisked and added to form a dough, which is shaped into roughly 30-gram balls, flattened into disks, and baked at 180°C (350°F) until lightly golden. The lack of gluten requires careful handling after baking.
The biscuits are tender inside with a slightly crisp surface and a rich almond flavor. They are crispier when warm but become firmer as they cool, so gentle handling after baking is advised. These biscuits suit those avoiding gluten or looking for a low-carb bread alternative.
They can be served individually or alongside meals needing a bread component without gluten.
Ingredients
- 2 ½ cups ground almonds 250g, Use 2 ¼ cup or 225 grams if using super-fine almond flour, or almond meal
- 2 egg large
- 5 tablespoon butter 70g, melted
- 1 ¾ teaspoon baking powder
- ¼ teaspoon salt optional
Instructions
- Pre-heat the oven to 180 Celsius / 350 Fahrenheit electric or 160C / 320 fan.
- Mix the dry ingredients in a large bowl - almond flour, baking powder and salt, if using.
- Whisk the eggs and stir in the melted butter. Then add to the dry ingredients and combine into a dough with a fork.
- With your hands, roll balls of circa 30 grams each. Flatten into a disk with a thickness of about 1 inch and place on a baking sheet lined with parchment paper.
- Bake for around 15 minutes or until lightly browned.
Notes
- The biscuits contain approximately 7 grams of net carbohydrates each and yield about 12 pieces.
- Handle biscuits carefully when hot, as they are fragile due to the absence of gluten.
- Allow biscuits to fully cool on a wire rack to firm up before storing or serving.
