  • 1 1/2 cups almond flour 155g
  • 1 cup quick oats 97g
  • 2 teaspoons cinnamon powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 tablespoons butter softened at room temperature, unsalted
  • 2 tablespoons applesauce unsweetened
  • 6 tablespoons brown sugar or coconut sugar
  • 5 tablespoons cane sugar raw organic
  • 1 egg large
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk the flour, oats, cinnamon, baking soda, and salt together.
  3. In a separate large bowl, use an electric hand mixer to beat together the butter and applesauce. Add in the sugars, egg, and vanilla, and beat until well combined.
  4. Stir the dry ingredients into the butter mixture, followed by the raisins. Cover and chill 15 minutes.
  5. Roll the dough into 1 tablespoon-sized balls and press out to about 1/3 inch thick.
  6. Bake until the edges are lightly golden brown and the cookies feel set, about 16 to 18 minutes. Let cool completely on the pan.
