Almond Joy Overnight Oats
Description
This recipe layers rolled oats with almond milk and chocolate protein powder, which are shaken together before adding coconut-flavored Greek yogurt, mini chocolate chips, cocoa powder, sliced almonds, and almond or coconut extract. Stirred or shaken thoroughly to coat the oats, the jar is refrigerated for at least two hours or overnight, allowing the oats to absorb liquid and soften.
At serving, additional cold milk can be added to reach a creamier consistency. The flavor combines chocolate and almond, complemented by coconut notes from the yogurt and extract. Mini chocolate chips provide bursts of sweetness, while sliced almonds add a textural contrast.
The oats can be eaten cold directly from the refrigerator, or gently warmed in short microwave intervals if preferred warm. The mixture keeps well making it convenient for a ready-made breakfast.
Ingredients
- ⅓ cup rolled oats
- ⅔ cup almond milk unsweetened
- ⅓ cup Greek yogurt coconut flavored
- 1 coop chocolate protein powder I used Clean Simple Eats Brownie Batter
- ½ tbsp mini chocolate chips
- ½ tsp cocoa powder
- ½ tbsp almonds sliced
- ½ tsp almond extract optional, or coconut extract
Instructions
- In a mason jar, add the almond milk and then protein powder. Tighten the lid on the jar and shake it a bit so the protein powder combines with the milk.
- Remove the lid and add oats, yogurt, shredded coconut, cocoa powder, sliced almonds, chocolate chips, and extract.
- Close the lid on the jar and shake to combine. If your jar is small and there isn’t room to shake the ingredients together, use a spoon or small rubber spatula to stir and combine. You want the oats well covered.
- Place your jar in the refrigerator for at least 2 hours or overnight. Stir before eating and enjoy! Note: I'll add another ⅓-½ cup of cold milk before eating. It makes them super creamy.
Notes
- This dish can be served cold or warmed up in 30-second microwave intervals until heated throughout.
- Adding an additional ⅓ to ½ cup of milk before eating improves creaminess and consistency.
