Almond Pesto Sauce or Dip

This Almond Pesto Sauce or Dip blends soaked almonds with fresh basil, garlic, lemon juice, and flavorful seasonings to produce a creamy, thick sauce suitable for dipping or drizzling. The use of nutritional yeast adds a savory note, and adjusting the water amount lets you tailor thickness. It provides a nutty, herbaceous spread with tangy citrus and umami accents, versatile for many serving options.

Description

The Almond Pesto Sauce or Dip recipe creates a creamy blend using almonds softened by blending with water, lemon juice, apple cider vinegar, fresh basil, garlic, nutritional yeast, and liquid aminos. The almonds require around 1-2 minutes of processing in a high-powered blender to reach a smooth consistency. Nutritional yeast imparts a subtle cheese-like flavor, complementing the fresh herbs and acidity from lemon and vinegar.

The resulting sauce has a blend of nutty, tangy, and savory elements with a smooth, spreadable texture. The thickness can be easily adjusted by adding more water incrementally to reach your desired consistency, making it suitable as a dip for vegetables, a spread for bread, or a sauce for various dishes.

This almond-based pesto offers a dairy-free alternative to traditional pesto, relying on wholesome plant ingredients. It's prepared entirely by blending, simplifying the process while still delivering complex flavors without cooking steps.

Ingredients

Servings
  • 1 cup almonds
  • ¾ cup water
  • ¼ cup lemon juice
  • 2 Tablespoons apple cider vinegar
  • cup basil fresh
  • 1 clove garlic
  • 3 Tablespoons nutritional yeast
  • 1 Tablespoon Bragg's liquid aminos

Instructions

  1. Add all ingredients to a high powered blender or food processor and process/blend until smooth.
  2. Note that almonds are a hard nut so it takes a around 1-2 minutes of blending for the mixture to thin out and become the consistency of a dip/sauce.
  3. For a thinner sauce, just add more water, 1 Tablespoon at a time until the consistency is how you like it.
