Almond Pulp Energy Balls

Almond Pulp Energy Balls combine leftover almond pulp with nuts, dates, cacao, and warm spices to create chewy, bite-sized snacks. These no-bake balls feature raw almonds and Medjool dates for natural sweetness and texture, while cocoa powder adds a rich chocolate note. Rolled into small spheres and optionally coated with hemp seeds, coconut flakes, or extra cacao, they serve as convenient, nutrient-dense bites that can be refrigerated and enjoyed over several days.

Description

The Almond Pulp Energy Balls start with a mix of dried almond pulp from homemade almond milk, raw almonds, and pitted Medjool dates processed until chunky but not fully smooth. Raw cacao powder, vanilla extract, cinnamon, and salt are blended in to build layered flavors marked by natural sweetness and subtle spice. Adding maple syrup or a little water adjusts stickiness for easier shaping.

The mixture forms firm, moist balls that maintain their shape after rolling by hand. Optional coatings such as hemp hearts, coconut flakes, or cocoa powder contribute varying textures and finishes. These energy balls provide a chewy and slightly crunchy contrast thanks to the nuts and coatings.

They make practical and portable snacks or quick energy boosts, suitable for refrigeration up to five days or freezing for longer storage. Their use of almond pulp helps minimize food waste by repurposing ingredients from almond milk preparation into wholesome treats. Simple preparation without baking makes them accessible for home cooks and busy lifestyles.

Ingredients

Servings
  • ½ cup almond pulp Should be fairly dry, from making almond milk, packed
  • ½ cup raw almonds or other nut such as walnuts or pecans
  • 1 cup Medjool dates About 10 large dates, pitted, packed
  • ¼ cup raw cacao powder or regular cocoa powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt fine sea salt
  • 1 tablespoon maple syrup optional

Optional coatings:

  • hemp hearts
  • coconut flakes or coconut flour
  • raw cacao powder or cocoa powder

Instructions

  1. Add the pulp, almonds, and dates to the bowl of a food processor. Let it run for 10 to 15 seconds or just until the mixture is chunky.
  2. Add the cacao, vanilla, cinnamon, and salt, and process until incorporated. Squeeze some of the mixture between your fingers; it should stick together. If it's not sticky enough add the maple as mentioned below, or add a splash of water.
  3. Taste and add the optional maple syrup if desired, then pulse to incorporate. Use a rounded tablespoon of the date-nut mixture per ball. Roll between your palms until smooth. Makes about 16 balls.
  4. Enjoy plain or roll in coconut, extra cacao, or hemp seeds. Store in the refrigerator for up to 5 days.

Notes

  • Store energy balls refrigerated and consume within 5 days for best freshness.
  • For extended storage, wrap well and freeze the balls for up to two months.
