Description
Alphabet Soup starts with sautéing diced onion and garlic seasoned with Italian herbs and black pepper to build an aromatic base. A combination of vegetable stock and water is added along with diced potatoes, mixed vegetables, tomato paste, and canned tomatoes. Simmered to soften the vegetables and develop flavor, it forms a light but hearty broth. The final step is to add alphabet pasta towards the end of cooking, which remains tender but not mushy.
The soup offers a blend of soft vegetables and tender pasta in a gently seasoned tomato broth. It suits a light lunch or a starter and can be adjusted for thickness by varying broth amounts. For reheating or make-ahead meals, the pasta can be cooked separately and added fresh to avoid becoming overcooked. Variations can include different vegetable mixes depending on available produce.
Smaller diced potatoes cook faster, and simmering longer reduces the soup for a richer consistency. This approach maintains texture and avoids sogginess in the final soup.
Ingredients
- 1 tablespoon neutral cooking oil generic cooking oil
- ½ onion diced
- 1 garlic minced, clove
- 1 teaspoon Italian seasoning
- ¼ teaspoon black pepper
- 4 cups vegetable stock (1 litre)
- 1 cup water (235ml)
- 2 cups mixed vegetables or canned or fresh) (160g, frozen
- 1 potato peeled and diced, medium
- 2 tablespoons tomato paste
- 14 ounce diced tomatoes canned (undrained) (400g)
- 1 cup alphabet pasta dry (125g)
Instructions
- Heat the oil in a large pot over a medium heat. Add the onion and cook for 4 minutes, stirring often, or until soft.
- Stir in the garlic, Italian seasoning, and pepper and cook for a further minute.
- Add the broth, water, vegetables, potato, tomato paste, canned tomatoes and bring to the boil. Reduce the heat and simmer for 15 minutes. Add more time if the potatoes or vegetables aren’t yet cooked.
- Stir in the alphabet pasta and cook for a further 5-10 minutes, or the time indicated on the packet.
- Serve and enjoy!
Notes
- Add pasta only at the end to prevent overcooking and maintain texture.
- For make-ahead meals, cook soup without pasta and add fresh when reheating.
- Cut potatoes into small pieces to reduce cooking time.
- Adjust soup thickness by adding more broth for thinner soup or simmering longer for thicker consistency.
