Alphabet Soup is a smooth tomato-based broth enriched with sautéed onions, garlic, and aromatic herbs, simmered with small ground turkey meatballs and alphabet-shaped pasta. Description

This Alphabet Soup begins by gently cooking onions and garlic in olive oil to build a flavorful base. Tomatoes and broth, seasoned with salt, pepper, sugar, thyme, and basil, simmer to blend flavors thoroughly. The tomato mixture is then pureed until smooth, giving the soup a consistent texture without visible tomato pieces.

Meanwhile, small meatballs are prepared from ground turkey, soaked bread, milk, garlic salt, and egg, formed into bite-sized portions that cook quickly when poached in the simmering soup. Alphabet pasta is added near the end of cooking to maintain a tender yet resilient texture.

The resulting soup is warm and comforting, combining herbaceous tomato broth with protein-rich meatballs and pasta shapes that engage children and adults alike. It serves well as a starter or light main dish during cooler weather.

Ingredients

  • 3 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 56 oz tomato 2 cans
  • 6 cups chicken broth or beef broth
  • salt to taste
  • black pepper to taste
  • 1 tablespoon granulated sugar
  • 1 teaspoon thyme dried
  • 1 teaspoon basil dried

for the meatballs-

  • 1 lice sandwich bread
  • 3 tablespoons milk
  • 1 lb ground turkey Butterball brand
  • 1 large egg
  • 1 tablespoon garlic salt
  • 1 cup alphabet pasta or short cut pasta

Instructions

  1. Place a large pot over medium heat. Pour in olive oil and saute onion for 4-5 minutes or until tender. Stir in garlic and cook another minute.
  2. Pour in tomatoes, broth, salt, pepper, sugar, and spices. Bring to boil, then reduce to simmer and cover.
  3. Break sandwich bread into bite sized pieces and place into a large bowl. Stir together with milk and soak 1-2 minutes. Stir in remaining ingredients for meatballs until incorporated. Roll into small, bite-sized pieces.
  4. Using an immersion blender, puree tomato soup until completely smooth. Drop meatballs into simmering broth to poach and cook 5 minutes. {It doesn't take long!}
  5. Add in cooked pasta and stir. Ladle into bowls and serve hot.
