Description
To prepare Amaranth Porridge, amaranth grains are combined with almond milk and vanilla—either from a split vanilla bean or vanilla extract—in a saucepan. The mixture is brought to a boil, then simmered covered for 20 to 25 minutes until the liquid is fully absorbed, resulting in a soft, creamy porridge. Ingredients
- 2 cups almond milk unsweetened
- 1 cup amaranth

Instructions
- In a medium saucepan stir in the almond milk, amaranth and vanilla together. Bring to a boil. Cover and let simmer for 20-25 minutes or until liquid is absorbed. Remove vanilla pod.
- Serve with fruit, nuts, honey and additional almond milk if you would like.
Notes
- Lightly toast walnuts in a non-stick pan before adding as topping to enhance their nutty flavor.
- Use either half a vanilla bean split or vanilla extract to flavor the porridge.
