This Ranchero Sauce starts by softening chopped onions, seeded and minced jalapeño, and garlic in oil, developing a aromatic base. The mixture is then pureed with canned diced tomatoes, tomato sauce, chili powder, and chipotle peppers in adobo sauce for depth and heat. Returning to the saucepan, the sauce is boiled and simmered until reduced to about two cups, concentrating flavors. Seasoned with kosher salt and black pepper, it achieves a balanced spicy and smoky profile.

Ingredients
- 1 tablespoon canola oil
- 1 medium onion chopped
- 1 jalapeño seeded and minced
- 2 cloves garlic minced
- 1 .5 oz can diced tomatoes undrained
- ½ cup tomato sauce canned
- 1 teaspoon chili powder
- 1 chipotle pepper canned in adobo sauce, diced, seeded
- 1 teaspoon chipotle adobo sauce
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- In a medium saucepan, heat the oil over medium heat.
- Once hot, add the onion, jalapeno, and garlic, and cook, stirring occasionally, until softened, about 5 minutes.
- Transfer the mixture to a blender.
- Add the tomatoes and their juice, the tomato sauce, chili powder, and chipotle pepper and sauce, and puree.
- Return to the saucepan, and bring to a boil over high heat.
- Reduce the heat to medium-low, and cook, stirring frequently, until reduced to about 2 cups, about 15 minutes.
- Season with salt and pepper.
- Let cool, then store in airtight container, until ready to use.
