Ambrosia Salad
Description
This Ambrosia Salad begins with whipping chilled heavy cream, powdered sugar, and vanilla extract until stiff peaks form, then folding in sour cream for smoothness. This creamy base is combined with mini marshmallows and a blend of well-drained fruit ingredients including sweetened shredded coconut, mandarin oranges, maraschino cherries, and pineapple tidbits.
The salad is then refrigerated for at least an hour to allow flavors to meld and the texture to set into a light, sweet, and creamy fruit salad. The marshmallows add soft bursts of sweetness, while the coconut and fruit provide varied textures and natural juice notes.
Serving cold, this dish is typically enjoyed as a dessert or sweet side at gatherings and holiday meals. Properly draining the fruit is important to prevent the salad from becoming watery over time.
Ingredients
- ¾ cup heavy cream chilled
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
- ½ cup sour cream
- 4 cups mini marshmallows either regular or fruit-flavored
- 1 ½ cups coconut sweetened shredded
- 11 ounces mandarin orange well drained
- ¾ cup maraschino cherries stems removed, rinsed, and drained
- 1 cup pineapple tidbits well drained
Instructions
- In a medium mixing bowl, beat together the heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.
- Add the sour cream and fold into the whipped cream until evenly combined.
- In a large mixing bowl, stir together the mini marshmallows, coconut flakes, oranges, maraschino cherries, and pineapple.
- Pour the sour cream mixture over the salad ingredients and stir until everything is evenly coated in the sour cream mixture.
- Cover and refrigerate for at least one hour before serving. Top with more cherries if desired.
Notes
- Rinse and thoroughly dry maraschino cherries to prevent color bleeding into the salad.
- Ensure all fruit is well drained to avoid a watery salad if preparing more than an hour in advance.
- Allow the salad to chill for at least one hour to let flavors develop fully.
