Description
Ambrosia Salad is a sweet fruit salad combining canned pineapple tidbits, mandarin oranges, maraschino cherries, and halved green grapes mixed with mini marshmallows, sweetened shredded coconut, and chopped pecans. The dressing is made by whipping heavy cream with granulated sugar and vanilla extract until fluffy, then gently folding in light sour cream to add a slight tang and creamy texture. The fruits provide juicy bursts, while the marshmallows add a soft chewiness and the coconut and pecans introduce texture and nutty flavor.
The salad is chilled for at least an hour or overnight, allowing flavors to meld and the mixture to firm up. It can be served as a dessert or a sweet side dish at gatherings or holidays. Its combination of creamy and fruity elements makes it a refreshing yet indulgent option.
Before assembly, draining canned fruits thoroughly prevents unwanted excess liquid which can make the salad watery. Rinsing cherries removes some sweetness and helps balance the salad. Additional coconut and pecans can be sprinkled on top for presentation and extra flavor.
Ingredients
- 1 20- ounce pineapple tidbits canned
- 1 15- ounce mandarin oranges canned
- 1 cup maraschino cherries , drained
- 1 cup heavy whipping cream
- 1 tablespoon granulated sugar
- ½ teaspoon vanilla extract
- ½ cup sour cream light
- 3 cups mini marshmallows
- 1 cup coconut sweetened shredded
- ¾ cup pecans , chopped
- 1 cup green grapes , halved
Instructions
- Place the pineapple and mandarin oranges in a strainer and set aside to drain for 30 minutes to 1 hour. Drain the cherries and rinse with cold water and set aside.
- Whip the cream with the sugar and vanilla until light and fluffy. Gently fold in ⅓ of the sour cream, then fold in the next ⅓, and then the final ⅓.
- Gently stir in the marshmallows, coconut, and pecans. Gently fold in the grapes, pineapple, Mandarin oranges, and maraschino cherries. Top with a few more sprinkles of coconut and chopped pecans if desired.
- Chill for 1 hour up to overnight, then serve.
