Amish Apple Fritter Bread
Description
This recipe blends peeled, chopped apples with brown sugar, cinnamon, and ginger for a spiced fruit mixture. The wet ingredients include egg, granulated sugar, vegetable oil, sour cream, and vanilla extract, combined then mixed with flour, baking soda, and salt. Most of the apple mixture is folded into the batter, then poured into a prepared loaf pan. The remaining apple pieces are layered on top to create a textured topping.
The bread is baked at 350°F until an internal temperature of 200°F is reached, ensuring a moist, fully cooked crumb. Cooling before slicing helps set the loaf, and it offers a tender texture with bursts of apple and warm spice. A simple powdered sugar glaze with vanilla and milk is spread on after baking to add sweetness and moisture.
This bread works well with baking apple varieties that hold their shape, such as Granny Smith or Honeycrisp. It can be made in various loaf pans or a bundt pan if desired. The bread can be stored up to two days at room temperature, a week refrigerated, or frozen for up to three months when well wrapped.
To thaw frozen bread, leave overnight at room temperature before serving.
Ingredients
- 2 apple peeled and chopped, medium, baking variety
- 1/2 cup light brown sugar
- 2 tsp ground cinnamon heaping spoonfuls
- 1 tsp ground ginger
- 1 egg room temperature, large
- ⅓ cup granulated sugar white
- ¼ cup vegetable oil
- ¼ cup sour cream room temperature, full-fat
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- ½ tsp kosher salt
Glaze
- 1 cup powdered sugar sifted
- 1 tsp vanilla extract
- 3 tbsp milk
Instructions
Make Apple Fritter Bread
- Preheat your oven to 350 degrees F. Prepare your loaf pan with nonstick spray or cake release.
- In a medium mixing bowl, mix the chopped apples, brown sugar, cinnamon, and ginger together. Set aside.
- In a large mixing bowl, whisk together the egg, granulated sugar, vegetable oil, sour cream, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and kosher salt, then add it to the bowl of wet ingredients. Use a rubber spatula or wooden spoon to mix the in dry ingredients until almost completely mixed in.
- Fold in 3/4 the amount of the apple-cinnamon mixture into the batter, then pour into your prepared loaf pan.
- Top the apple fritter bread with the remaining apple chunks and bake for 50-55 minutes, or until the internal temperature is 200 degrees F.
- Let the cake cool in the pan for at least 30 minutes before serving. I personally like waiting an hour or until it's room temperature.
Make the Powdered Sugar Glaze
- In a small mixing bowl, whisk together the powdered sugar, vanilla extract, and milk until it comes to a smooth consistency. If it's too thin for your liking, sift in a little more powdered sugar.
- Pour the glaze over the fritter bread generously right before serving.
Notes
- Use baking apples like Granny Smith, Honeycrisp, Empire, or Pink Lady for best texture.
- This recipe can be baked in an 8x4 or 9x5 loaf pan, or a 6 cup bundt pan for cake-style presentation.
- Let the bread cool completely before wrapping for room temperature (2 days) or refrigeration (1 week) storage.
- Freeze well-wrapped bread for up to 3 months; thaw overnight on the counter before serving.
- Check doneness by ensuring the internal temperature reaches 200°F using a thermometer.
