Amish Apple Fritter Bread
Description
The recipe starts by creaming butter with sugars, then incorporating eggs and vanilla for richness. Flour and baking powder are whisked together and added to create a smooth batter with milk. Chopped apples mixed with cinnamon and sugar form the filling layered within the batter in the loaf pan. Baking at 350°F for about one hour allows the batter to set and apples to soften, while the cinnamon sugar sprinkled on top caramelizes and forms a flavorful crust.
The finished bread has a moist, tender crumb featuring sweet apple pockets in each slice. The cinnamon-sugar topping adds a delightful crunch and aroma, enhancing the bread's overall texture and taste. Slices can be served warm or at room temperature, making it suitable for breakfast or a cozy snack.
Ingredients
Bread
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup butter softened, 1 stick
- 2/3 cup granulated sugar
- 2 egg
- 2 teaspoons vanilla extract
- 1 /2 all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup milk
Apple Filling
- 2 cups apple peeled, cored, and chopped
- 1 teaspoon ground cinnamon
- 1 tablespoon granulated sugar
Glaze
- 1/2 cup powdered sugar
- 1 tablespoon milk
Instructions
- Preheat oven to 350F. Prepare an 8.5x4.5x2.5-inch loaf pan by greasing it with non-stick cooking spray.
- In a small mixing bowl, whisk together the brown sugar and 1 teaspoon cinnamon; set aside.
- In a large mixing bowl, use an electric mixer to cream together the 2/3 cup granulated sugar and butter until light and fluffy. Beat in the eggs and vanilla, just until combined.
- In a small mixing bowl, whisk together the flour and baking powder. Add the flour mixture to the wet mixture and stir until combined. Add the milk and mix until smooth.
- Pour half of the batter into the prepared loaf pan and spread out evenly.
- In a small mixing bowl, combine the apple filling ingredients. Pour half of the apples over the batter in the pan, then spread on the remaining batter. Top with the remaining apples and press the apples down slightly.
- Sprinkle the brown sugar and cinnamon mixture over top of the bread.
- Bake at 350F for 1 hour, or until a toothpick inserted into the center comes out clean. Cool in the pan for about 30 minutes.
- In a small bowl, combine the glaze ingredients until smooth. Drizzle over the cooled bread.
- Slice the bread and serve.
