Amish Egg Noodles
Description
This recipe involves simmering extra wide egg noodles in a mixture of chicken broth enhanced with a bouillon cube and browned butter. The pot is covered and removed from heat to let the noodles steep for about 30 minutes, allowing them to tenderize and soak up flavor without overcooking. Stirring occurs periodically to prevent sticking and ensure even cooking.
If the noodles require more cooking, brief reheating on the stove softens them further. The dish is finished by adding butter, parsley flakes, and seasoning with salt and black pepper to taste, creating a richly flavored noodle dish with a smooth, buttery texture and fresh herb notes.
This preparation can be served immediately or kept warm covered for about 20 minutes without losing quality, making it flexible for meal timing.
Ingredients
- 6 tablespoons butter divided
- 28 ounces chicken broth
- 1 chicken bouillon cube
- 12 ounces egg noodles extra wide
- 1 teaspoon parsley flakes
- salt to taste
- black pepper to taste
Instructions
- In a large pan, brown two tablespoons of butter over medium heat.
- Pour the chicken stock and bouillon cube into the pan and bring to a boil.
- Add the egg noodles to the chicken stock and return to a boil. Cover the pot and remove from the heat.
- Let the noodles set for 30 minutes, stirring every 10 minutes or so.
- Test the noodles for doneness. If they are not cooked through, turn the heat back on and cook for 1-2 minutes until noodles are tender.
- Top with the remaining 4 tablespoons of butter, parsley, and salt and pepper to taste.
- Serve immediately or leave in the pan, covered, until ready to serve. These will stay warm for 20 more minutes or so with no problems.
Notes
- This recipe is a lightly adapted version from food.com with emphasis on gentle steaming and butter flavor.
- The noodles can be held warm, covered, for up to 20 minutes without compromising texture.
