  • 1 cup neutral cooking oil generic cooking oil
  • 3 large egg
  • ½ cup milk
  • ½ teaspoon vanilla
  • 1 cup granulated sugar
  • 2 cups flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • 2 teaspoons cinnamon
  • 2 vanilla pudding mix 3.4 ounces each, instant, small boxes
  • 1 cup nuts optional, chopped
  • 1 cup Amish Friendship Bread Starter

Cinnamon Sugar Mixture:

  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 325 degrees.
  2. In a large bowl, combine all of the ingredients.
  3. Mix well.
  4. Spray 2 loaf pans with cooking spray.
  5. Mix ½ cup sugar and 1 ½ teaspoons cinnamon into a small bowl. Dust the greased pans with half of this cinnamon/sugar mixture.
  6. Pour the batter evenly into the pans and sprinkle the remaining sugar mixture over the batter.
  7. Bake for 1 hour or until the a toothpick inserted into the center of the loaf comes out clean.
  8. Cool until the bread loosens from the pan evenly and turn onto a serving dish.

Notes

  • To make muffins, spray muffin pans and dust with cinnamon sugar before filling to add sweetness and texture to the crust.
  • Bake muffins at 425°F for 5 minutes, then reduce to 375°F for 13 minutes without opening the oven for even cooking and a tender top.
