These Amish Potato Dinner Rolls start with proofing instant yeast in warm water with a bit of sugar to activate it. The dough mixes mashed potatoes, flour, sugar, salt, eggs, and butter for richness. Using a stand mixer with a hook attachment helps develop smooth, elastic dough that no longer sticks to the bowl.

The dough rises in a warm place until nearly doubled, then is divided into 16 balls arranged tightly to bake for soft sides and tender texture. A second rise before baking improves lightness. Baking results in golden, soft rolls with a creamy mashed potato undertone.

These rolls make excellent dinner accompaniments due to their soft crumb and slight sweetness. They can be served warm with butter or alongside soups and stews.

  • 3/4 cup water about 115 degrees F, warm
  • 2 1/4 teaspoons instant yeast
  • 1/2 teaspoon granulated sugar
  • 1/3 cup granulated sugar
  • 4 1/4 cups all-purpose flour
  • 1 cup potato without seasonings, mashed, creamy
  • 1 1/2 teaspoons salt
  • 2 egg room. temperature
  • 6 tablespoons butter unsalted

Instructions

  1. In a medium bowl, combine the water, yeast, and 1/2 teaspoon of granulated sugar. Stir and set aside to proof.
  2. Microwave the butter until almost melted.
  3. In the bowl of a stand mixer fitted with the hook attachment, add the remaining 1/3 cup of granulated sugar, flour, creamy mashed potatoes, salt, eggs, and butter. Turn the mixer on low and mix until combined.
  4. Slowly add in the proofed yeast mixture and increase the mixer speed to medium. Mix until a smooth dough forms and it no longer sticks to the walls of the bowl.
  5. Transfer dough to a large greased bowl and cover loosely with plastic wrap or a clean kitchen towel. Let it rise for 90 minutes in a dark and warm place, until almost doubled in size.
  6. Grease a 9x13-inch baking pan with cooking spray or butter.
  7. Roll the dough into 16 equal balls, and arrange in the greased baking pan, seam-side down.
  8. Cover loosely with plastic wrap or a clean kitchen towel and allow to rise for 2 hours in a dark and warm place, but NOT on top of the oven.
  9. Preheat oven to 350 degrees F.
  10. Remove the plastic and bake for 20 to 25 minutes, or until the tops are golden brown.
