  • ½ cup salted butter 1 stick, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • cup ANDES Chocolates chopped
  • ½ cup semi-sweet chocolate chips
  • ½ cup mint-flavored fudge baking chunks

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit and line two large baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy with a hand or stand mixer.
  3. Add the egg and vanilla and beat just until creamy.
  4. In a separate bowl, whisk together the flour and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, mixing with a dough hook, if possible, until just combined.
  6. Fold in the chopped mint chocolate candy, chocolate chips, and mint chips, ensuring they are evenly distributed throughout the dough.
  7. Use a 1 ½ Tablespoon cookie scoop to form dough balls and place them onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 7-11 minutes or until the edges are lightly golden. The centers may appear slightly undercooked but will firm up as they cool.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving.
