Antojitos
Description
This Antojitos recipe starts with cream cheese softened and mixed together with breadcrumbs and hot sauce to create a creamy base. Chopped red and green bell peppers along with jalapeno peppers are folded into the mixture, contributing freshness and mild heat. The filling is spread evenly on whole wheat or other preferred tortillas, topped with shredded cheddar cheese, rolled up tightly, and sliced into 1-inch pinwheels.
The pinwheels are baked first at 350°F to warm through and then briefly broiled to achieve a golden brown finish and slight crispness on the outside. This results in a snack with a soft, creamy interior balanced by a crispy exterior. The peppers’ texture and flavor shine through the creamy filling, complemented by melted cheddar cheese.
These are served best with salsa or sour cream for dipping, making them suitable for gatherings or casual bites. The recipe is adaptable to various tortilla types and hot sauce preferences, making it customizable to taste and heat tolerance.
Ingredients
- 8 ounce cream cheese at room temperature
- ¼ cup breadcrumbs
- ¼ cup hot sauce
- ½ red bell pepper chopped
- ½ green bell pepper chopped
- 1 jalapeno pepper chopped
- 3 large tortillas I used ancient grain whole wheat tortillas
- 1 cup cheddar cheese shredded
Instructions
- Preheat oven to 350℉. Line a baking sheet with parchment paper.
- In a medium bowl add cream cheese, bread crumbs and hot sauce. Mix with a fork until cream cheese has softened. Add the peppers and mix them in well with the cream cheese.
- Spread the cream cheese mixture over each tortilla, ⅓ of the mixture for each tortilla, and sprinkle ⅓ of the cheddar cheese on each tortilla. Roll up the tortillas and cut them into 1 inch slices.
- Place the slices on the baking sheet.
- Bake at 350℉ for 10 minutes, then for another 3 minutes under the broiler.
- Serve with salsa or sour cream.
Notes
- You can substitute the whole wheat tortillas with any tortilla variety you prefer based on taste or availability.
- Adjust the amount or type of hot sauce or omit it entirely for a milder version.
- Add additional hot sauce to the filling if you prefer a spicier flavor.
