Apple and Brie Grilled Cheese with Hot Honey
Description
The sandwich starts with slices of sourdough, rye, or hearty white bread, lightly buttered. Inside, layers of thin Brie slices alternate with thinly sliced organic apples, creating a balance of creamy cheese and fresh fruit. A hot honey butter, made by blending salted butter, mild honey, and chili flakes, is spread on the bread to infuse a sweet heat throughout the sandwich as it cooks. Cooking over medium-low heat allows the cheese to melt thoroughly while the bread crisps evenly without burning.
The combination of Brie and apple provides a mild, creamy texture complemented by the tart and sweet apple slices. The hot honey butter introduces an aromatic, mildly spicy note that enhances the overall flavor profile. The sandwich is cooked to a golden brown on both sides, then allowed to rest briefly to set before slicing.
This grilled cheese variation offers a sophisticated balance, suitable for a comforting lunch or light dinner, pairing well with a simple side salad or as a standalone dish. Adjusting the chili flakes in the honey butter lets you control the spice level to suit your preference.

Apple Brie Grilled Cheese
- Lay all 8 pieces of bread out and lightly butter top side of each. (You may not need all 3 tablespoon if your butter is soft and easy to spread thinly.)
- Lay 4 pieces of the bread, buttered side down in a large, heavy bottomed frying pan. Spread ½ tablespoon honey butter on each slice in the pan, top each with 2 slices of brie, ½ thinly sliced apple fanned out and then top with remaining 1-2 slices of brie. Spread remaining honey butter on the unbuttered side of the leftover slices of bread and place honey side down on top of sandwiches.
- Turn on frying pan to medium-low and cook apple sandwiches until golden brown on bottoms. Flip carefully and continue to cook until browned on second side. (Approx 5 minutes per side) Remove from pan and let cool 5 minutes before slicing in half and serving.
- Serve alone or with a simple salad or light vegetable soup.
