Apple and hummus pita breads
Description
Apple and hummus pita breads feature soft mini pita pockets filled with a smooth garlic-infused hummus, slices of crisp Cosmic Crisp apple, Lebanese cucumber, and fresh microgreens like radish sprouts and snow pea sprouts. The hummus is made by blending canned chickpeas with garlic, tahini, lemon juice, olive oil, and seasonings, producing a creamy spread with a subtle garlic tang. The apples and cucumbers are sliced thinly to provide a fresh, crunchy contrast that complements the creamy hummus, while microgreens add a delicate peppery note.
The assembly is straightforward: pita breads are generously spread with the garlic hummus, then layered with cucumber, apple slices, and microgreens. A drizzle of olive oil and a sprinkle of salt finish the preparation, enhancing the flavors without overpowering the natural freshness of the ingredients. This combination results in a light, refreshing pita with a balance of creamy, crisp, and smooth textures, ideal for a quick lunch or a snack.
Ingredients
For assembling pita bread with hummus and apples
- 8 mini pita bread or one large pita bread
- 1 Cosmic Crisp apple
- 1 Lebanese cucumber
- ½ cup microgreens I used radish sprouts and snow pea sprouts, of your choice
- 1 cup hummus recipe below, or your choice of hummus, garlic
For garlic hummus:
- 1 chickpeas canned
- 2 garlic cloves
- ½ lemon
- ¼ cup tahini
- 2 TBs olive oil
- salt
- black pepper
Instructions
- Slice the cucumber into long, diagonal slices. Slice the apples. Rinse the microgreens.
- Set up the food processor or high powered blender.
Make hummus
- To make my garlic hummus, add 1 can of chickpeas and 2 cloves of garlic to food processor and pulse until well processed.
- Add tahini, lemon juice, salt and cumin, and process until well combined, about 5 minutes. Slowly drizzle in 2 tablespoons of olive oil. Check texture - if it's smooth and silky, omit water - but I usually add about ¼ cup to really get the texture I like.
- Process another 5 minutes. Taste and adjust flavours.
Assemble the pita bread with hummus and apples
- Arrange your mini pitas or large pita on a plate or cutting board. Smear a generous amount of hummus - 2 TBs for a mini pita, or much more than that for a large pita bread.
- Top with cucumber, apples, and microgreens, in that order. Drizzle with olive oil and sprinkle with salt. Finally, top with another slice of apple, for looks.
